Chicken Parmesan Origin 

Chicken Parmesan, also known as Chicken Parmigiana or simply “Chicken Parm”, is a beloved dish that has become a staple in Italian-American cuisine. However, its origins might surprise you.

The dish we know today as Chicken Parmesan actually has its roots in a traditional Italian dish called “Melanzane alla Parmigiana”, which was made with breaded, fried slices of eggplant instead of chicken. This dish was a staple in the southern regions of Italy, particularly Campania and Sicily.

The term “Parmigiana” in the name has led to some debate. While some believe it refers to the city of Parma in northern Italy, where Parmesan cheese originated, this theory is disputed by food historians.

They argue that the dish couldn’t have been named after Parma, as it wasn’t eaten in the northern regions of Italy. Some theories suggest that “Parmigiana” derives from the Sicilian word “damigiana”, referring to a wicker sleeve used for wine bottles and the hot casserole used to prepare and serve Melanzane alla Parmigiana.

Others believe it comes from the Sicilian word “palmigiana”, referring to the horizontal slats on a roof, which resemble the layering of eggplant slices in the dish.

The transformation from eggplant to chicken likely occurred when Italian immigrants arrived in the United States in the early 20th century.

At this time, proteins like chicken were more widely available in America than they had been in Italy.

As a result, Italian immigrants began to adapt their traditional dishes to incorporate these new ingredients, leading to the creation of Chicken Parmesan.

By the 1950s, Chicken Parmesan had become a popular dish in Italian-American restaurants in the northeastern United States. It also started to appear in home kitchens, with the first recorded instance of the dish appearing in a 1953 recipe book called “The Italian Cook Book” by Ada Boni.

Today, Chicken Parmesan is enjoyed in many forms around the world, from main courses in restaurants to sandwiches, and even as the subject of eating contests.

It’s a testament to the adaptability and enduring appeal of Italian cuisine, even when it’s given an American twist.

Chicken Parmesan Recipe:

Ingredients:

  1. 2 boneless, skinless chicken breasts
  2. 1 cup all-purpose flour
  3. 2 large eggs
  4. 1 cup panko bread crumbs
  5. 1 cup grated Parmesan cheese
  6. 1 cup marinara sauce
  7. 1 cup shredded mozzarella cheese
  8. Salt and pepper to taste
  9. Olive oil for frying
  10. Fresh basil leaves for garnish

Instructions:

Step 1: Preheat your oven to 375°F (190°C).

Step 2: Season the chicken breasts with salt and pepper.

Step 3: Dredge each chicken breast in flour, then dip in beaten eggs, and finally coat with a mixture of panko bread crumbs and Parmesan cheese.

Step 4: Heat olive oil in a skillet over medium heat. Add the chicken and cook until golden brown on both sides.

Step 5 : Transfer the chicken to a baking dish. Top each piece with marinara sauce and mozzarella cheese.

Step 6: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.

Step 7: Garnish with fresh basil leaves before serving.

Regional Variation:

In some regions, they like to add a bit of spice to their Chicken Parmesan. You can do this by adding some red pepper flakes to the marinara sauce. Or, for a Mediterranean twist, try adding some sliced olives and feta cheese on top before baking.
